Mexican-inspired pesto
The Ingredients
1/2 large shallot
2 cloves of garlic
1/2 bushel of cilantro
1/4 cup extra virgin olive oil
adobo
Combine all ingredients into a food processor and that is the pesto.
Served with shrimp and spaghetti.
