Leftover Coconut Curry Chicken

The Ingredients

1/2 coconut curry chicken breast
1/2 bag of spinach
1/2 sweet onion
1 tbsp light olive oil

Add olive oil to a pan and maintain at medium heat. Add onion and spinach, then sautée for a few minutes. Add chicken. Serve with rice or noodles.
